True Comfort Food

With the New Year comes many resolutions, the most common being better eating habits and hitting the gym.

I fit in to this category. I do go to the gym on a regular basis, but I seem to have eaten my way through this past holiday season.  My clothes are just a little too tight for my liking.  I mean, when I have to lie on the bed to button, then I need to hit a couple extra spin classes each week.

January 1st, I was at the gym.  January 2nd, at the gym.  I even went to the gym on the 3rd.  But then some serious cold weather hit, and making some comfort food just seemed like the right thing to do.

In my opinion, Mac & Cheese is the #! comfort food of all time.  It’s loaded with cheese and carbs and gooey goodness that just wraps around you like a blanket.

So yes, on the 3rd day of the year, I dropped my diet like a bad habit and I made my version of Mac & Cheese.  And I don’t regret a single bite.

There are hundreds of recipes out there for Mac & Cheese, but I like mine the best.  I think what makes mine so delicious is the smoked gouda cheese I add.  It adds a great depth to the dish, and certainly brings in that comfort.

What’s also great about Mac & Cheese is that it can be put in individual oven safe dishes, and can be frozen for up to 3 months.  So what I’m trying to tell you is, that if you make a big batch of this divine dish, it can end up being the gift that keeps on giving, if you know what I mean.
