Holding On To Summer – Delicious Labor Day Recipes

What’s going on here??  I woke up this morning and it was 43 degrees.  Way to clock in to September.  In fact, this entire week has dropped down to the high 40’s overnight and it kind of has me feeling a bit meh.  Chin up though self, because we still have one more fun summer holiday weekend ahead of us and I want to embrace every last minute.  And when I say embrace, I mean eat well and enjoy family and friends.  Please, join me!!  Here’s what’s on the menu:

Chicken Burger

Summer holidays are all about the grill for me.  This way I’m able to hang out and chat with everyone and enjoy the outdoors while I grill, and it keeps everyone outside and out of my kitchen.  So, on with the grilled recipes and first up, Chicken Burgers.  A low-cal twist on the classic beef, savory and delicious, they grill up in minutes and go with every side dish.  Easy to make, delicious to eat.  Click the photo for the recipe.

Delicious Grilled Corn.  OMG, it’s like heaven on a cobb.  Grilled to a golden char, then smeared with mayo and a coating of parmesan cheese.  I mean, I can’t even….  click the photo for the recipe

Grilled Potato Salad.  This salad makes an appearance at every single summer holiday, along with several other times in between.  Hands down, my very favorite salad in my repertoire.  Click the photo for the recipe.

Grilled Panzanella Salad

Grilled Panzanella Salad.  Half grilled, half fresh, this salad is crunchy and sweet and savory.  Fresh cucumbers and tomatoes compliment the grilled peppers, red onion and bread.  I mean, come on, who doesn’t like grilled bread?!!  Click the photo for the recipe.

Grilled Peaches w: Sweet Mascarpone

Grilled Peaches With Sweet Mascarpone.  Grilled peaches are the bomb.  Cut in half and grilled on the cut side then filled with an amazing sweet mascarpone cheese is delectable.  Click the photo for the recipe.Also, grilled and served with blue cheese and honey drizzled over the top makes for not only a great dessert, but also a tasty appetizer.
